COUNTRY STYLE RHUBARB PIE WITH STRAWBERRIES

1 pie, approx 8 pieces
Pie dough:
1.2 cup spelt flour
2 tablespoons cane sugar
5.3 oz butter
2 tablespoons cold water
Filling:
14 oz rhubarb
1.2 cup strawberries
0.4 cup cane sugar
1 tablespoon potato starch
Preheat oven to 437F.
Dough:
Quickly work sifted flour, sugar and butter to a crumbly mixture, preferably in a food processor. Add water and work to a dough. Leave in a plastic bag in the fridge for about 1 hour.
Filling:
Peel the rhubarb if it's too rough. Cut it in approx 1 inch pieces. Mix rhubarbs, split strawberries, sugar and potato starch.
Roll out the dough to a circle about 12 inches on a floured table. Transfer to a springform pan, diameter about 9 inches. Place the filling in the middle of the dough round and fold the edges over. Bake in the middle of the oven for about 30 minutes.
