CHOCOLATE PEAR ALMOND CAKE
Chokladkaka med päron och mandel
1 cake, approx 10 pieces
3½ oz dark chocolate
3½ oz almond paste
3½ oz butter
2 eggs
0.4 cup cane sugar
0.4 cup Kesella or substitute
1.4 cups flour
2 teaspoons vanilla sugar
2 tablespoons cocoa
1½ teaspoons baking powder
1 large pear
Preheat oven to 347F. Grease and flour a round baking pan with a hole in the middle.
Chop the chocolate and roughly grate the almond paste. Melt the butter and allow to cool slightly. Beat eggs and cane sugar until fluffy and beat the butter into the mixture. Add Kesella and flour mixed with vanilla sugar, cocoa and baking powder. Gently stir in the chopped chocolate and almond paste and pour the batter in the baking pan.
Core the pear and cut in wedges. Press them into the batter. It's OK if some of them are still visible on the surface. Bake in the lower part of the oven for 45 to 50 minutes. Make sure it's baked through. Leave in the pan for a while before unmoulding and is allowed to cool under the pan.
