OVEN-BAKED PORK LOIN WITH
HERBS AND CREAM SAUCE
Ugnsbakad örtkarré med gräddsås
Serves 4
1 onion
3 garlic cloves
2.2 lbs whole pork loin
2 teaspoons Chinese soy sauce
1 tablespoon dried thyme
2 teaspoons dried rosemary
1 teaspoon salt
½ teaspoon pepper
3.2 cups water
Cream sauce:
2 cups pan juices
0.4 cup cream
3 tablespoons Maizena
2 teaspoons Chinese soy sauce
Peel the onion and cut in wedges. Peel and split the garlic cloves. Brush the meat with soy sauce. Mix thyme and rosemary and rub the meat. Place in an iron pot with a lid. Flavor with salt and pepper and place the onion wedges around the meat. Add water and cover with the lid. Place it in the oven at 302F for 3 hours. Turn the meat after half the time.
Take up the meat and strain (and reserve) the juices. Pour it in a saucepan, add cream mixed with Maizena and simmer the sauce for a few minutes. Add soy sauce and flavor the meat with salt and pepper.
Carve the meat in slices or pieces and serve with boiled potatoes, sugarsnaps, asparagus, pickled red onion and pickled gherkin.
