CITRUS SALAD WITH ALMOND CREAM
Citrussallad med mandelgrädde
Serves 6
3 oranges
2 blood oranges
2 clementines
fresh juice from 1 lime
fresh juice from 1 lemon
2 tablespoons powdered sugar
½ vanilla pod
Almond cream:
3½ oz almond paste
2 egg yolks
1.2 cup heavy cream
Decoration:
lime zest
Peel oranges and clementines with a sharp knife and remove all the white stuff underneath. Slice and put in a bowl. Mix lime juice, lemon juice and powdered sugar. Split the vanilla pod lengthwise and scrape out the seeds. Blend the seeds into the liquid, pour it over the fruit and blend. Leave to draw for an hour or so.
Almond cream:
Grate the almond paste finely and mix with egg yolks and 2 tablespoons of the cream. Beat
remaining cream. Stir in the almond paste and serve with the salad.
Decorate with lime zest.
