COFFEE CAKE WITH DARK CHOCOLATE
AND MOLASSES
Sockerkaka med mörk choklad och sirap
1 cake, 16 pieces
Cake:
5.3 oz dark chocolate
7 oz room-tempered butter
0.8 cup cane sugar
0.3 cup white molasses
3 eggs
1.2 cup flour
3 tablespoons cocoa
1 teaspoon bicarbonate of soda
2 teaspoons vanilla sugar
some salt
0.8 cup Turkish yogurt
Decoration:
powdered sugar (know this about Swedes -
we're crazy about sifting every cake or pie
with powdered sugar! I don't care much for
it myself even though it does look nice!)
Preheat oven to 347F.
Melt the chocolate. Stir butter, cane sugar and molasses until smooth. Add the eggs, one by one, while stirring. Mix the dry ingredients and stir it into the batter together with chocolate and yogurt. Pour the batter in a greased and floured baking pan, capacity 6 cups.
Bake in the lower part of the oven for about 50 minutes. Sift with some powdered sugar before serving.
