OVEN PANCAKE WITH APPLE COTTAGE CHEESE

Serves 4
10 oz streaky bacon, sliced
4 eggs
1.6 cup flour
3.2 cups regular milk
salt
Apple cottage cheese:
7 oz cottage cheese
1 apple
For serving:
grated carrots
frozen lingonberries stirred with sugar
Preheat oven to 437F.
Shred the bacon and fry until almost crisp. Drain on paper towels. Spread it out in the bottom of a roasting pan, 12 x 16 inches. Beat together eggs, flour and half of the milk to a lump-free batter. Beat in remaining milk and salt. Pour the batter in the roasting pan and bake just below the middle of the oven for about 30 minutes.
Mix cottage cheese and grated apple and serve with the pancake, together with carrots and lingonberries.
