COFFEE WALNUT MOUSSE
Kaffe- och valnötsmousse
Serves approx 4
1 tablespoon powdered coffee
2 tablespoons water
4 egg yolks
0.4 cup light-brown muscovado sugar
1.7 oz walnuts
1 cup heavy cream
Decoration:
walnuts
flaked chocolate
Stir the coffee powder with water. Chop the walnuts. Stir them together with egg yolks and sugar in the coffee, in a heat-proof bowl. Place over a saucepan with boiling water. Beat the creme in the bowl until it thickens. Remove the bowl and continue beating until cold. Beat the cream until really stiff and stir the cream into the cold coffee creme.
Divide the creme in 4 serving glasses and store cold for a few hours. Decorate with flaked chocolate and walnuts.
