PORK LOIN WITH APPLE, CABBAGE AND POTATOES
Kotlettrad med äpple, kål och potatis

Serves approx 4

Approx 2 lbs 10 oz pork loin,
bone-in
1 teaspoon salt
some black pepper
9 potatoes
2 onions
3½ apples
approx 4 cups shredded cabbage
1 teaspoon caraway
chopped leafy parsley


Preheat oven to 347F.

Mix 1 teaspoon salt with some black pepper and rub this into the meat. Place the meat in a roasting pan and insert a meat thermometer into the thickest part. It takes about 1 1/2 hours to reach an inner temperature of 167F.

Peel the potatoes and cut in wedges. When about 1 hour remains for the meat, place the potatoes around it, drizzle with some fat and flavor with salt. Blend in the salt, put back in the oven and cook for another 30 minutes. Peel the onions and cut in wedges and place them next to the potatoes. Continue cooking for about 15 minutes. Shred the cabbage. Core and cut the apples in wedges. Put cabbage and apples among potatoes and onions and stir around lightly, add cumin and also add some bouillon if it looks dry. Cook for another 15 minutes or so.

When all is done, de-bone the meat and cut in slices.
