Elderberry Panna Cotta with Strawberry Compote - Fläderpannacotta med jordgubbskompott

ELDERBERRY PANNA COTTA WITH
STRAWBERRY COMPOTE
Fläderpannacotta med jordgubbskompott

Serves 6

Panna cotta:
4 gelatin sheets
or 2 teaspoons gelatin powder
1 vanilla pod
2 cups heavy cream
2 tablespoons sugar
0.8 cup concentrated elderberry drink

Strawberry compote:
8.8 oz strawberries
2 tablespoons water
2½ tablespoons sugar


Soak the gelatin sheets in cold water for 5 minutes, or do as you normally do with the gelatin powder. Split the vanilla pod and scrape out the seeds. Bring to a boil (with the empty pod as well) with cream and sugar and simmer for 5 minutes. Remove from heat and take up the vanilla pod. Take up the gelatin sheets and melt them in the cream. Mix in the elderberry drink and pour up in serving glasses. Leave in a cold place for 4 hours.

Strawberry compote:
Trim and slice the strawberries. Boil them quickly with water and sugar, allow to cool and divide them on top of the panna cotta.
