Fillet of Pork with Mushroom and Blue Cheese Sauce - Fläskfilé med svamp- och ädelostsås

FILLET OF PORK WITH MUSHROOM
AND BLUE CHEESE SAUCE
Fläskfilé med svamp- och ädelostsås

Serves 4

1 lb 5 oz fillet of pork
salt, pepper
butter or margarine
8.8 oz mushrooms
1 shallot
0.4 cup heavy cream
0.4 cup creme fraiche
0.8 cup water
2 tablespoons concentrated veal fond
1 tablespoon Maizena
2.6 oz blue cheese


Trim and slice the meat. Flavor with salt and pepper and fry the meat on both sides in 1 tablespoon butter. Take up the meat. Slice the mushroom and peel and chop the shallots. Sauté mushrooms and shallot in the pan with butter. Dilute with cream, creme fraiche, water and fond and boil for 5 minutes. Thicken the sauce and bring to a boil.

Crumble the blue cheese in the pan and let it melt in the sauce. Flavor to taste with salt and pepper, put in the meat and simmer slowly for a couple of minutes.

Serve with anything you like. Myself I like roast potatoes with this, and a salad.
