MUSTARD FISH WITH MASHED POTATOES

Serves 2
1 piece of leek, approx 4 inches
1 tablespoon butter or margarine
10.6 oz white fish fillets, e.g. haddock or cod
2 teaspoons fresh lemon juice
salt, pepper
1 tablespoon Dijon mustard
0.8 cup low-fat creme fraiche
1 tablespoon chopped parsley
For serving:
mashed potatoes
green peas
lemon slices
Preheat oven to 437F.
Trim and slice the leek and divide in 2 oven-proof, greased serving dishes. Place the fish in the dishes and drizzle with lemon juice. Flavor lightly with salt and pepper.
Mix mustard and creme fraiche and spread this over the fish. Cook in the middle of the oven for about 15 minutes and sprinkle with parsley.
Serve with mashed potatoes, boiled green peas and sliced lemon.
