French Tomato Cod - Fransk tomattorsk

FRENCH TOMATO COD
Fransk tomattorsk

Serves 4

4 portion-sized back
of cod fillets
1 teaspoon salt
2 tablespoons fresh lemon juice
2.6 melted butter or margarine
1 garlic clove
approx 0.8 cup crumbled, day-old
white bread
0.8 cup chopped parsley
1 teaspoon dried tarragon
4 tomatoes
salt, pepper


Preheat oven to 437F.

If you use frozen fish, thaw it first. Place in a greased, oven-proof pan, flavor with salt and drizzle with the lemon juice. Melt the fat. Peel and finely chop the garlic. Chop the parsley and crumble the bread. Stir everything together with crumbled tarragon and distribute it over the fish.

Cut the tomatoes in rather thick slices and place them around the fish. Flavor the tomatoes lightly with salt and pepper. Cook the fish in the middle of the oven for about 20 minutes or until white and non-transparent. Serve with boiled or mashed potatoes and vegetables.
