Plum Almond Cake - Plommon- och mandelkaka

PLUM ALMOND CAKE
Plommon- och mandelkaka

1 cake

5.3 oz butter
approx 8 plums
3 eggs
5.3 oz almond paste
0.6 cup sugar
grated zest from 1 lemon
0.8 cup flour
½ teaspoon baking powder

Decoration:
18 pekans
powdered sugar
lemon balm or fresh mint


Preheat oven to 347F.

Melt the butter and allow to cool. Split the plums and remove the stones. Process eggs, almond paste and sugar to a fluffy mixture in a food processor. Blend in butter and lemon zest and sift in the flour mixed with baking powder.

Line the bottom of a springform pan, diameter approx 9 inches, with baking paper. Cut off excess paper. Pour the batter in the greased, floured pan. Place the plum halves over the surface and decorate with pekans. 

Bake in the middle of the oven for about 30 minutes. Leave the cake for 5 minutes before gently loosening it from the pan. Allow to cool on a rack under a baking cloth. Decorate with sifted powdered sugar and lemon balm.
