MARZIPAN FROMAGE

Serves 4 to 6
2 gelatin sheets
2 egg yolks
0.4 cup sugar
5.3 oz marzipan
some ground cardamom
0.3 cup creme fraiche
0.8 cup heavy cream
Decoration:
strawberries
Soak the gelatin in cold water for about 5 minutes, or do as you normally do with the powder. Beat egg yolks and sugar until white and fluffy. Grate the marzipan/almond paste and stir it into the egg batter. Add cardamom and creme fraiche and stir to a smooth mixture. Squeeze out any excess liquid from the gelatin sheets and melt in their own moisture in a saucepan over low heat. Stir the gelatin into the egg batter in a thin but steady stream while stirring continuously.
Beat the cream and stir it into the batter. Divide the fromage in 4 to 6 serving glasses. Place in the fridge to set, about 4 hours. Decorate with strawberries.
