LEMON CHICKEN WITH ROAST POTATOES
AND ONIONS
Citronkyckling med rostad potatis och lök
Serves 4
2.2 lbs chicken drumsticks,
fresh or frozen and thawed
1 lb 5 oz new potatoes
3 red onions in wedges
½ lemon
Marinade:
0.2 cup liquid margarine
grated zest from 1 lemon
½ tablespoon soy sauce
2 chopped garlic cloves
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon fresh rosemary,
finely chopped
or 1 teaspoon dried rosemary
Preheat oven to 437F.
Mix the marinade in a bowl. Place the drumsticks in an oven-proof pan. Brush with marinade all around. Cook in the middle of the oven for about 20 minutes. Scrub the potatoes in cold water. Take out the chicken and put the potatoes in the pan. Brush with marinade and put the pan back in the oven for about 20 minutes. Take out again, place the onions in the pan and continue cooking for about 5 minutes.
Serve the chicken with lemon and a salad. If you want sauce, make a simple one with sour cream and green herbs.
