FRIED FISH WITH LEMON DILL SAUCE
Stekt fisk med citron- och dillsås
Serves 2
10.6 oz potatoes
2 carrots
1 red bell pepper
olive oil
salt, pepper
10.6 oz white fish fillets
½ egg
0.2 cup dried breadcrumbs
1 tablespoon butter or margarine
Lemon dill sauce:
1 tablespoon butter or margarine
1 tablespoon flour
0.2 cup water
0.6 cup cooking cream
1 fish bouillon cube
fresh juice from ½ lemon
2 tablespoons chopped dill
Preheat oven to 437F.
Scrub the potatoes and cut the large ones in smaller pieces. Peel and cut the carrots in pieces. Trim and cut the bell pepper in pieces. Mix potatoes, carrots and bell pepper with oil, salt and pepper in an oven-proof pan. Cook in the oven for 20 minutes.
Cut the fish in pieces, coat it with beaten egg and then in breadcrumbs mixed with salt and pepper. Fry the fish in butter for about 3 minutes on each side.
Lemon dill sauce:
Melt the butter in a saucepan, stir in the flour and dilute with water, cream and bouillon cube. Boil for 5 minutes. Flavor to taste with fresh lemon juice, dill, salt and pepper.
Serve the fish with sauce and oven-baked potatoes, carrots and bell pepper.
