STRAWBERRY PIE WITH WHITE CHOCOLATE CREME

Serves 8
Pie crust:
1 cup flour
0.4 cup almond flour
0.2 cup powdered sugar
4.4 oz butter
1 egg yolk
1.7 oz white chocolate
Filling:
1.7 oz white chocolate
1.4 cups heavy cream
1 vanilla pod
2 tablespoons sugar
Decoration:
approx 14 oz strawberries
lemon balm
powdered sugar
Preheat oven to 437F.
Mix flour, almond flour, powdered sugar, butter in pieces and egg yolk in a food processor until you have a dough ball. Flatten it out in a springform pan, diameter about 9 inches. Cover with plastic foil and put in the fridge for at least 30 minutes. Prick the bottom and bake the pie crust for about 15 minutes. Allow to cool on a rack.
Chop the white chocolate, put it in a glass bowl and melt in the microwave for 30 seconds. Brush the chocolate over the bottom and sides of the pie crust which will keep the dough dry from the filling.
Filling:
Chop the white chocolate and put in a bowl. Bring 0.4 cup of the cream to a boil and pour it over the chocolate. Stir until it melts and allow to cool. Split the vanilla pod open and scrape out the seeds. Mash them with sugar to separate the seeds. Stir remaining cream with vanilla and add the chocolate mixture. Put in the fridge. Beat the cream mixture until firm and pipe it around the edge of the pie crust and spread the rest over the bottom.
Decorate with cleaned, trimmed strawberries and lemon balm and sift with powdered sugar when serving.
