GROUND MEAT PATTIES WITH BLUE CHEESE

Serves 2
0.2 cup regular milk
1 tablespoon dried breadcrumbs
7 oz ground meat, beef + pork
½ egg
salt, pepper
1.7 oz blue cheese
0.4 cup water
0.2 cup heavy cream
1 tablespoon concentrated veal fond
1 teaspoon Chinese soy sauce
2 teaspoons Maizena
For serving:
roast potatoes
green beans
Mix milk and breadcrumbs in a bowl and let swell for 5 minutes. Mix with ground meat, egg, salt and pepper. Crumble the blue cheese in the mixture and blend well. Shape to 4 patties and fry in butter for about 3 minutes per side. Take them up.
Pour water, cream, fond and soy sauce in the frying pan. Bring to a boil and thicken the sauce. Flavor to taste with salt and pepper and serve with roast potatoes and boiled green beans.
