FYRSTE CAKE WITH ALMOND FILLING
Fyrstekaka med mandelfyllning
1 cake
1.8 cup flour
½ cup powdered sugar
7 oz butter or margarine
3 egg yolks
Filling:
7 oz almonds
4.4 oz room-tempered butter or margarine
0.8 cup sugar
grated zest from 1 orange
2 large eggs
4 tablespoons finely chopped,
candied orange peel (optional)
Brushing:
1 beaten egg
Preheat oven to 347F.
Mix flour with powdered sugar. Add butter and egg yolks and quickly work to a dough. Reserve approx 1/4 of the dough and flatten it out in a springform pan, diameter approx 9 inches, with the large piece of dough.
Scald, skin and grind the almonds. Stir fat and sugar until smooth and add almonds and grated orange zest. Work in the eggs, one by one, while stirring vigorously. Add the optional candied orange peel. Pour the almond batter in the pan and bake in the lower part of the oven for about 25 to 30 minutes.
Meanwhile, work some more flour into the reserved dough. Roll it out and cut in stripes. Place them over the baked cake in a nice pattern and brush with beaten egg. Put back in the lower part of the oven and bake for another 30 minutes until nicely colored and done.
Allow to cool before loosening the sides from the cake. Sift with powdered sugar just before serving.
This is a classical Norwegian cake. Delicious!
