Gourmet Cake - Gourmetkaka

GOURMET CAKE
Gourmetkaka

1 cake

10.6 oz carrots
0.8 cup sugar
3 eggs
0.4 cup Kesella or substitute
0.8 cup flour
0.4 cup nuts
2 teaspoons baking powder
grated zest from 1 lemon
2 tablespoons fresh lemon juice


Preheat oven to 347F.

Peel and finely grate the carrots. Grind the nuts. Beat eggs and sugar until fluffy and blend in Kesella and carrots. Mix flour, nuts and baking powder and stir this into the batter together with lemon zest and juice.

Pour the batter in a greased, floured baking pan with a hole in the middle, capacity 6 cups. Bake in the lower part of the oven for 50 to 60 minutes. Try with a tester. Allow to cool completely under the pan.

This cake freezes well.
