GOURMET FISH AU GRATIN
Gratinerad gourmetfisk
Serves approx 4
6 fillets of whitefish,
fresh or frozen and thawed
1 teaspoon salt
some white pepper
0.4 cup white wine or water
2 leeks
2 tablespoons butter or margarine
Gratin sauce:
1 cup creme fraiche
1 small glass jar of bleak roe,
approx 2½ oz
2½ oz grated cheese
Preheat oven to 482F.
Trim, clean and slice the leeks. Sauté until tender without coloring. Spread it out in the bottom of an oven-proof pan. Flavor the fish with salt and pepper. Boil it in the wine or water until almost done, about 8 minutes. Place on top of the leek.
Reduce the liquid slightly, stir in cream and cheese and simmer the sauce for a while. Add the bleak roe. Pour the sauce over the fish and bake in the middle of the oven for about 10 to 15 minutes, until heated through and the surface is nicely colored.
Serve with boiled potatoes and vegetables of your choice.
