LEMON CAKE WITH APPLES
Citronkaka med äpple
1 cake, approx 8 pieces
1.7 oz butter or margarine
2 eggs
0.6 cup sugar
1.2 cup flour
2 teaspoons baking powder
0.2 cup regular milk
grated zest from 1 lemon
Filling:
3 apples
0.2 cup sugar
2 teaspoons cinnamon
crushed nib sugar
Preheat oven to 347F.
Melt the butter and allow to cool. Beat eggs and sugar until fluffy. Mix flour and baking powder and stir into the batter together with milk and melted butter. Finely grate the lemon zest and gently stir it into the batter. Pour in a greased, floured springform pan, diameter approx 9 inches.
Filling:
Peel, core and cut the apples in wedges. Put the apple wedges in a plastic bag together with sugar and cinnamon and shake around. Spread the apples out over the surface in a nice pattern and sprinkle with crushed nib sugar.
Bake in the lower part of the oven for 45 minutes.
