SUMMER CAKE WITH STRAWBERRIES
Sommartårta med jordgubbar
1 cake, approx 10 pieces
3 eggs
1.2 cup sugar
5.3 oz butter
1 teaspoon crushed cardamom seeds
1.2 cup flour
1 teaspoon baking powder
5.3 oz thinly sliced rhubarb
5.3 oz grated almond paste
Topping:
1.6 cup heavy cream
0.8 cup Turkish or Greek yogurt
0.4 cup powdered sugar
4 cups split strawberries
Beat eggs and sugar until fluffy. Melt the butter and allow to cool slightly. Mix cardamom, flour and baking powder in a bowl. Add butter and flour mixture to the egg batter and blend well. Spread it out in a greased, floured roasting pan, 8 x 12 inches.
Distribute rhubarb and almond paste over the surface. Bake in the middle of the oven for 35 minutes. Allow to cool.
Topping:
Beat the cream rather stiff. Mix yogurt and powdered sugar. Add 0.4 cup whipped cream to the yogurt mixture. Stir in remaining cream.
Loosen the cake with a spatula. Place on a serving plate and spread the topping over the cake. Finish with strawberries.
