Lemon Cake with White Chocolate Frosting - Citronkaka med vit chokladfrosting

LEMON CAKE WITH WHITE CHOCOLATE FROSTING
Citronkaka med vit chokladfrosting

1 cake, 10 pieces

2.6 oz butter
2 eggs
0.8 cup sugar
grated zest from 1 lemon
fresh juice from 1 lemon
0.4 cup unflavored yogurt
1 cup flour
0.6 cup almond flour
1½ teaspoon baking powder

Frosting:
3½ oz white chocolate
1.7 oz butter
3½ oz cream cheese

Decoration:
lemon zest
physalis berries


Preheat oven to 347F.

Melt the butter and allow to cool. Beat eggs and sugar until fluffy. Add lemon zest and juice, melted butter and yogurt. Mix flour, almond flour and baking powder and stir it into the batter. Pour in a greased, floured rectangular baking pan, 6 cups. Bake in the lower part of the oven for about 45 minutes. Leave the cake in the pan for 10 minutes before unmoulding.

Frosting:
Melt the chocolate over a waterbath (not too high heat when melting white chocolate). Stir the chocolate into the room-tempered butter and blend well. Stir in the cream cheese. Spread the frosting over the cake and decorate with physalis berries and lemon zest.
