Fillet of Pork with Lemon Pesto - Fläskfilé med citronpesto

FILLET OF PORK WITH LEMON PESTO
Fläskfilé med citronpesto

Serves 4

1.1 lb fillet of pork
salt, pepper
4 slices streaky bacon
olive oil for frying

Lemon pesto:
1.7 oz pine nuts
1.7 oz grated Parmesan cheese
2 teaspoons grated lemon zest
1½ garlic clove
3 tablespoons chopped parsley
2½ tablespoons fresh lemon juice
4 tablespoon olive oil
salt, pepper

For serving:
sliced baguette
lemon wedges
a salad, perhaps with melon?


Trim and slice the fillet in 4 pieces. Flavor with salt and pepper and wrap each piece in bacon. Brown on both sides and finish over medium heat. Turn the meat several times.

Lemon pesto:
Mix pine nuts, Parmesan cheese, lemon zest, garlic, parsley, lemon juice and oil and mix to a smooth mixture. Flavor to taste with salt and pepper.

Toast the baguette and spread with lemon pesto. Serve with the meat together with a salad.
