LEMON CUPS WITH ICING

18 cups
½ cup flour
0.2 cup potato starch
½ teaspoon baking powder
3½ oz butter
2 eggs
2 egg yolks
½ cup sugar
1 teaspoon grated lemon zest
Icing:
4 tablespoons powdered sugar
½ teaspoon grated lemon zest
barely 1 teaspoon water
Preheat oven to 347F.
Place 18 aluminum baking tins on a baking plate. Measure flour, potato starch and baking powder and melt the fat. Beat eggs with sugar for a few minutes, add the flour mixture and lemon zest and stir just a few rounds. Add the fat and stir until well blended.
Pour the batter in the baking tins and bake for 12 minutes on the middle shelf of the oven.
Allow the cups to cool while stirring the icing together. Drizzle some icing over each cup.
