Lemon Dessert - Citronvisp

LEMON DESSERT
Citronvisp

Serves 4

0.6 cup polenta grains
3.2 cups water
1½ teaspoons grated lemon zest
fresh juice from 1 lemon
0.4 cup sugar
2 egg Whites

Decoration:
kiwifruit


Boil the polenta grains in the water for 8 to 9 minutes. Meanwhile, grate the lemon zest and squeeze out the juice. Allow the polenta to cool in the saucepan with the lid on. If you're in a hurry, lower the saucepan in cold water (not all the way of course). 

Flavor with sugar and lemon and beat the egg whites until stiff. Blend everything together and pour in a serving bowl. Decorate with kiwifruit and serve.
