LEMON FISH
Citronfisk
Serves 2
10.6 oz white fish fillets
salt, pepper
1 tablespoon butter or margarine
1 tablespoon flour
0.4 cup regular milk
0.2 cup heavy cream
grated zest from ½ lemon
fresh juice from ½ lemon
2 tablespoon chopped basil
5 cherry tomatoes
0.2 cup grated cheese
For serving:
potatoes
sugarsnaps
Preheat oven to 482F.
Place the fish in a greased, oven-proof pan and sprinkle with salt and pepper.
Melt the fat in a saucepan and stir in the flour. Dilute with milk and cream and boil for 5 minutes. Flavor to taste with lemon zest, juice, salt and pepper. Stir in basil and pour the sauce over the fish. Top with split tomatoes and cheese and bake in the oven for 20 minutes.
Serve with boiled potatoes and sugarsnaps.
