MANOR CAKE WITH LEMON CREAM
Herrgårdstårta med citrongrädde
1 cake, 14 pieces
Layer:
3½ oz butter
0.6 cup sugar
5 egg yolks
4 tablespoons regular milk
0.8 cup flour
2 teaspoons baking powder
Meringue:
5 egg whites
1 cup sugar
1.7 oz flaked almonds
Filling:
1.2 cup heavy cream
0.2 cup lemon curd
2 cups sliced strawberries
Preheat oven to 302F.
Layer:
Beat room-tempered butter and sugar until fluffy. Beat in the egg yolks, one by one, and add the milk. Finish with the flour mixed with baking powder and beat to a smooth mixture.
Meringue:
Beat the egg whites with half of the sugar until firm and foamy. Beat in remaining sugar.
Spread out the batter in a roasting pan lined with baking paper, 12 x 16 inches. Spread the meringue on top and sprinkle with flaked almonds. Bake in the lower part of the oven for about 30 minutes. Lift the cake from the roasting pan and allow to cool. Loosen the cake with a spatula and allow to cool on the baking paper, covered by the pan.
For serving:
Split the cake in the middle. Beat the cream and stir in the lemon curd. Put the layers together with lemon cream and sliced strawberries in between.
