MINESTRONE WITH BACON
Minestronesoppa med bacon
Serves 2
2½ oz streaky bacon
½ onion
1 garlic clove
1 carrot
0.2 cup chopped parsley
1 tablespoon butter or margarine
1 cup sieved tomatoes
1.4 cups water
1 tablespoon tomato ketchup
2 tablespoon concentrated chicken fond
0.2 cup granarolo or risoni pasta
salt, black pepper
For serving:
bread
grated Parmesan cheese
parsley
Shred the bacon. Peel and chop onion and garlic. Peel and cut the carrot in pieces. Sauté bacon, onion, garlic, carrot and parsley in a pot with butter or margarine for about 3 minutes. Add tomatoes, water, ketchup and fond. Bring the soup to a boil, add the pasta and boil for another 8 minutes. Flavor to taste with salt and pepper.
Serve the soup with bread. Sprinkle with some grated Parmesan and parsley.
