MUSTARD-BAKED COD WITH CHIVES AND PARSLEY
Senapsgratinerad torsk med gräslök och persilja
Serves 4
14 oz fillets of cod, fresh or frozen
salt, pepper
1.2 cup cooking cream
2 tablespoons mustard
2 teaspoons Maizena
2 tablespoons chopped chives
1 tablespoon chopped parsley
Decoration:
chopped parsley
chopped chives
For serving:
boiled rice
7 oz green peas
Preheat oven to 347F.
If you use frozen fish, half-thaw it in the fridge. Cut the fish in ½-inch slices and place them in a greased oven-proof pan. Sprinkle with salt and pepper.
Beat together cream, mustard and Maizena in a bowl. Add chives and parsley and pour the sauce over the fish. Cook in the middle of the oven for about 15 minutes. Sprinkle with parsley and chives.
Serve with boiled rice mixed with green peas. Add the peas to the rice when the rice has 3 minutes left to boil.
