MY LUXURIOUS SAUSAGE STEW

Serves 4
1.1 lbs Falu sausage
or suitable equivalent
8.8 oz cabbage
3½ oz celeriac (celery root)
1 leek
1 can chantarelles, approx 7 oz
1 red bell pepper
3 tablespoons liquid from the can
1 cup water
0.8 cup low-fat creme fraiche
1 teaspoon oregano
black pepper
Shred the cabbage. Trim and shred the leek. Peel and shred the celeriac. Trim and shred the bell pepper. Pour off the liquid from the chantarelles (but reserve it) and shred them. Cut the sausage in pieces and brown it. Transfer to a pot.
Brown vegetables and mushrooms in some fat until slightly colored. Transfer to the pot. Add oregano, mushroom liquid, water and creme fraiche. Let it all simmer, covered, for about 10 minutes. Flavor to taste with black pepper.
Serve with boiled pasta or boiled potatoes.
