NECTARINE COBBLER
Nektarincobbler
Serves 6
3½ oz butter
0.4 cup sugar
0.6 cup oats
0.4 cup flour
1 teaspoon vanilla sugar
1 teaspoon baking powder
0.2 cup heavy cream
1 egg
Filling:
4 nectarines
2 tablespoons butter
0.2 cup cane sugar
For serving:
vanilla sauce
Preheat oven to 347F.
Filling:
Split the nectarines and remove the stones. Cut in wedges and fry them quickly in a frying pan with butter and cane sugar. Divide the nectarines in 6 oven-proof serving bowls.
Beat together room-tempered butter and sugar. Add oats, flour, vanilla sugar and baking powder and mix to a batter. Stir in cream and eggs and drop out the batter over the fruit. Bake until the cobblers are nicely colored, approx 20 minutes.
Serve with ice cream.
