PANCAKE ROLL WITH JAM AND CREAM

Serves 4 to 6
0.2 cup liquid margarine
0.6 cup flour
2 cups regular milk
3 eggs, beaten
1 tablespoon sugar
Jam and cream:
0.6 cup heavy cream
0.4 cup jam of your choice
Preheat oven to 437F.
Line a roasting pan, 8 x 12 inches, with greased baking paper. Heat the liquid margarine in a saucepan together with flour, dilute with milk in turns and boil it all for a while. Remove from heat and blend in beaten eggs and sugar. Pour the pancake batter in the pan and bake in the middle of the oven until nicely colored, about 25 to 30 minutes. Allow to cool and unmould.
Beat the cream and mix with the jam. Spread out on the pancake in an even layer and roll up. Cut in pieces like in the picture.
