STRAWBERRY TARTLETS

1 cup flour
6.2 oz almond paste
2.6 oz butter
1 small egg
Vanilla creme:
0.8 cup heavy cream
0.4 cup regular milk
3 egg yolks
3 tablespoons Maizena
1 vanilla pod, split lengthwise
2 tablespoons sugar
Decoration:
8.8 oz strawberries, sliced
Preheat oven to 437F.
Mix flour, almond paste, butter and egg in a food processor until you have a dough ball. Take it up onto a floured work surface and roll out to a sausage. Cut in 16 pieces and roll into balls. Place in baking tins (paper or metal) and thumb it out. Place in the fridge for 30 minutes, then bake in the middle of the oven for about 10 minutes. Allow to cool on a rack.
Mix cream, milk, egg yolks, Maizena, split vanilla pod and sugar in a saucepan. Simmer to a thick creme while stirring and cool over a cold waterbath. Take up the pod and put a dab of vanilla creme in each tartlet shortly before serving. Trim and decorate with strawberries.
