PARADISE DESSERT

Serves 4
3½ oz white baking chocolate
1 egg yolk
2 tablespoons rum or liqueur
of your choice
grated zest from 1 lime
0.8 cup cream
2 cups strawberries
Decoration:
lime slices
Melt the chocolate over a hot waterbath or in the microwave (not too hot when you're melting white chocolate as it's more heat-sensitive). Stir in egg yolk, rum and lime zest. Beat the cream until stiff and blend it in.
Slice the trimmed strawberries and alternate with chocolate mousse in serving glasses. Store cold until serving.
