PEA SOUP WITH LENTILS

Serves 4
7 oz salted side of pork
1 leek
1 teaspoon oil
½ teaspoon dried thyme
1 teaspoon dried marjoram
4 cups water
1 vegetable bouillon cube
2 bay leaves
1.2 cup dried red lentils
7 oz "floury" potatoes, King Edward type
0.4 cup roughly ground mustard
Shred the pork and fry together with leek (save some for decoration) in a saucepan with oil and the dried herbs. Add water and add bouillon cube, bay leaves, lentils and potatoes. Simmer for about 20 minutes.
Serve with mustard and any accompaniment you might like.
