Pear Meringue Cake - Päronkaka med maräng

PEAR MERINGUE CAKE
Päronkaka med maräng

1 cake, 12 pieces

2.6 oz butter
0.4 cup sugar
4 egg yolks
0.2 cup regular milk
0.6 cup flour
1½ teaspoons baking powder

Meringue:
4 egg whites
0.8 cup sugar
2½ pears
1 teaspoon crushed cardamom seeds


Preheat oven to 347F.

Beat room-tempered butter and sugar until fluffy. Beat in the egg yolks and stir in milk and flour mixed with baking powder. Spread out the batter in a pan, 10 x 12 inches, lined with baking paper.

Beat the egg whites until stiff and foamy, add the sugar little by little while beating to a glossy meringue. Spread the meringue on top of the batter.

Clean and slice the pears really thinly. Spread the slices out on top of the meringue, sprinkle with crushed cardamom and bake for 25 minutes.
