PEAR SOUP
Päronsoppa
Serves 4
½ vanilla pod
1 star anise (you know, that star-shaped dried
little licorice-tasting thing)
0.8 cup water
0.8 cup sugar
0.8 cup dry white wine
1 lb pears
For serving:
some kind of small cookie
Decoration:
star anises
Split the vanilla pod piece with a sharp knife and scrape out the seeds. Put pod, seeds, star anise, water, sugar and wine in a saucepan and bring to a boil. Core the pears and cut them in small dice. Put them in the soup. Chill the soup over a cold waterbath.
Pour into serving glasses, decorate with star anises and serve with any small cookies you like.
