MAZARIN CUTS WITH LINGONBERRY JAM
Mazarinsnitt med lingonsylt
40 cookies
1 cup flour
½ teaspoon baking powder
0.2 cup sugar
3½ oz butter
1 egg
Filling:
7 oz almond paste
2 eggs
1.7 oz butter
5 bitter almonds
Icing:
1 cup powdered sugar
0.2 cup lingonberry or cranberry jam
Preheat oven to 392F.
Mix flour, baking powder, sugar and butter to a crumbly mixture. Add the egg and work to a dough. Leave in the fridge for 30 minutes.
Filling:
Grate the almond paste and stir until smooth with egg, room-tempered butter and grated bitter almonds in a bowl. Take up the dough and roll it out on a floured work surface. Place in a baking pan, 8 x 12 inches, paper-lined. Spread out the filling on the layer and bake for 20 minutes. Allow to cool.
Icing:
Stir powdered sugar with jam in a bowl and ice the cake. Let set and cut in triangles.
