TOMATO-BAKED FISH
Tomatbakad fisk
Serves 2
8.8 oz white fish fillet,
e.g. cod or haddock
salt, pepper
1 piece of leek, 4 inches
1 tablespoon butter or margarine
1 teaspoon tomato paste
10 cherry tomatoes
2 tablespoons dill
0.2 cup grated cheese
For serving:
potatoes

Preheat oven to 392F.
Place the fish in a greased, oven-proof pan and flavor with salt and pepper. Rinse and shred the leek and sauté until tender in a frying pan with butter. Add tomato paste, split tomatoes and stir, then sauté for a couple of minutes. Stir in dill and distribute this mixture over the fish. Sprinkle with cheese and bake in the oven for 20 minutes.
Serve with boiled potatoes and a salad.
