RASPBERRY LEMON MARMALADE
Hallon- och citronmarmelad
2.2 lbs raspberries
grated zest from 1 lemon
fresh juice from 1 lemon
2.2 lbs special jam sugar
(here we have a kind of sugar that
is produced especially to make jam
and marmalade, called "jam sugar",
containing pectin from citrus fruits
and works super fast)
Put raspberries, lemon zest and juice in a pot and bring to a boil. Add jam sugar and boil vigorously for 2 minutes while stirring.
Spoon up in warm glass jars and seal with the lids. Place the jars upside down to cool, then store in the fridge.
