STRAWBERRY DESSERT CAKE
Jordgubbskaka
1 cake, 8 to 10 pieces
5.3 oz butter or margarine
0.6 cup sugar
1 egg
0.6 cup flour
0.4 cup potato starch
1½ teaspoon baking powder
Topping:
0.8 cup creme fraiche
3 eggs
0.2 cup sugar
3½ oz strawberries
Preheat oven to 392F.
Stir butter and sugar until smooth, add the egg and flour mixed with potato starch and baking powder. Spread out the batter in a greased, floured springform pan, diameter approx 9 inches. Bake for about 15 minutes.
Mix creme fraiche, eggs and sugar. Gently distribute over the cake and sprinkle with sliced strawberries. Bake for another 30 to 40 minutes. Cover with aluminum foil if it gets too dark.
Serve with whipped cream and some extra strawberries.
