FESTIVE CHICKEN

Serves approx 4
1 lb 5 oz chicken thigh fillets
salt, pepper
1 leek
½ chicken bouillon cube
1 cup cream
0.2 cup pesto
Roll up the fillets and secure with toothpicks. Flavor lightly with salt and pepper and fry until golden in some butter. Take them up.
Rinse and shred the leek and sauté lightly in some butter. Add cream, bouillon cube and pesto. Bring the sauce to a boil. Put the chicken in the sauce and simmer for about 10 minutes. Flavor to taste.
Serve with fried vegetables and bread.
