Strawberry Pie with Vanilla Creme - Jordgubbspaj med vaniljkräm

STRAWBERRY PIE WITH VANILLA CREME
Jordgubbspaj med vaniljkräm

Serves 10

4 cups strawberries

Pie dough:
1.7 oz almonds
0.2 cup sugar
1.2 cup flour
4.4 oz butter
1 egg yolk

Vanilla creme:
1 vanilla pod
1 cup regular milk
3 egg yolks
0.3 cup sugar
2½ tablespoons Maizena
2 tablespoons concentrated 
elderberry drink
1.2 cup heavy cream


Vanilla creme:
Split the vanilla pod lengthwise. Put it in a saucepan with the milk and bring to a boil. Remove from heat and leave to draw for 15 minutes. Take up the vanilla pod and scrape out the seeds. Add them to the milk. Beat egg yolks, sugar and Maizena in a bowl. Add the flour mixture while beating until smooth. Pour back into the saucepan and heat while stirring until the first bubble shows. Add elderberry drink and stir it in. Cool the creme over a cold waterbath.

Beat the cream. Add 1/3 of it to the batter and stir to a smooth creme. Gently add remaining cream and leave in the fridge.

Pie dough:
Place skinned, scalded almonds, sugar, flour and butter in cubes in a food processor and work to a crumble. Add egg yolk and continue until you have a dough ball. Flatten it out in a springform pan, diameter approx 9 inches. Leave in the fridge for about 30 minutes.

Prick the pie bottom with a fork and bake in the middle of the oven for about 15 minutes. Allow to cool. Place on a serving plate and fill with vanilla creme and trimmed strawberries.
