SUMMER PIE WITH PEACHES, APRICOTS AND LIME
Sommarpaj med persikor, aprikoser och lime
Serves 2
5.3 oz butter
0.6 cup sugar
1.2 cups flour
Filling:
2 peaches
2 apricots
1 teaspoon grated lime zest
Preheat oven to 392F.
Mix butter, sugar and flour and sprinkle half of the crumble in the bottom of a small, oven-proof pan. Remove the stones from the fruit and cut the pulp in wedges. Spread out over the first crumble layer and sprinkle with lime zest, then finish with remaining crumble. Bake for about 20 minutes until nicely colored.
Serve preferably a little lukewarm, with whipped cream.
