TASTY FILLET OF PORK
Mustig fläskfilépanna
Serves approx 4
1.1 lb fillet of pork
salt, pepper
7 oz small sausages, like
half-sized frankfurters
8.8 oz mushrooms
1.2 cup cream
1 tablespoon concentrated
veal fond
1½ teaspoons Dijon mustard
1 garlic clove
1 teaspoon rosé pepper
chopped parsley
Trim the fillet and slice it. Flavor with salt and pepper. Fry for about 2 minutes on both sides in a shallow, wide saucepan and take it up. Cut the sausages in two and trim and slice the mushrooms. Brown sausage and mushrooms in some fat and put the meat back in the pan.
Beat together cream with veal fond, mustard and crushed garlic. Stir into the pan. Simmer it all for 5 minutes and flavor to taste. Sprinkle with rosé pepper and chopped parsley.
Serve straight from the pan with boiled rice or potato wedges and a salad.
