MUSTARD PATTIES WITH FRIED VEGETABLES

Serves 2
7 oz ground meat
1 tablespoon chopped red onion
1 tablespoon mustard
1 egg yolk
salt, pepper
1 tablespoon butter or margarine
1 carrot
remaining red onion, sliced
1 bell pepper
1 tablespoon oil
3½ oz boiled chick peas
Mix the ground meat with chopped onion (save remaining onion for the veggie mix), mustard and egg yolk. Flavor with salt and pepper. Shape to 4 patties and fry in butter for 3 to 4 minutes on each side.
Peel and shred the carrot. Slice the onion and cut the bell pepper in pieces. Sauté until tender in oil. Mix the vegetables with chick peas and top with some green herbs.
