RICE PORRIDGE CAKE WITH BERRIES AND CREAM
Risgrynskaka med bär och grädde
Serves 4
2 eggs
2 cups rice porridge
0.2 cup cream
0.2 cup raisins
0.2 cup chopped almonds
grated zest from ½ orange
For serving:
7 oz strawberries, frozen
and thawed
0.4 cup whipped cream
Preheat oven to 437F.
Beat the eggs and mix with the porridge. Stir in cream, raisins, almonds and orange zest. Divide the batter in greased serving bowls and bake for 20 minutes. Serve with berries and cream.
If you wish, you can of course bake it in a large serving bowl instead. Increase the time in the oven with 10 to 15 minutes.
This is one of the most delicious desserts I know. So many childhood memories!
