DREAMY STRAWBERRY CHEESECAKE

Layer:
3½ oz butter
7 oz diegstive biscuits
Filling:
1 lb 5 oz cream cheese
0.8 cup creme fraiche
0.6 cup sugar
1 tablespoon vanilla sugar
0.4 cup Maizena
3 eggs
3½ oz white chocolate
1 lb 9 oz strawberries
(sorry if the measurement is strange)
Decoration:

Preheat oven to 392F.
Layer:
Melt the butter. Crush the biscuit in a food processor and blend in the butter. Line the bottom of a springform pan, diameter approx 9 inches, with baking paper. Flatten out the crumble evenly and bake for about 8 minutes.
Filling:
Beat cream cheese and creme fraiche well to a smooth mixture. Beat in sugar, vanilla sugar, Maizena and eggs. Melt the chocolate over a waterbath and stir it into the batter. Trim and mix 14 oz strawberries and stir it in.
Trim remaining strawberries and slice them. Place them alongside the walls of the baking pan. Gently pour in the batter and bake at 347F for 40 minutes. Cover with aluminum foil if the surface gets too dark. Turn off the oven and leave the cake in for 30 minutes. Allow to cool completely, preferably until the next day, before serving.
Gently loosen the cake and decorate with strawberries.
